Discretion. Access. Precision. Ibiza has energy, but very few places treat wine with the same seriousness as the world’s great cellars. Echezo was created to fill that gap, quietly.
Who is it really for?
Collectors, yacht hosts and clients who are not looking for a wine list, but for the right bottle. People who understand that provenance matters more than price, and that the story behind a wine is part of its value.
What defines your selection?
We focus on the most exacting terroirs of France, Burgundy, Bordeaux, Champagne. Not volume, only relevance. Producers such as Domaine de la Romanée-Conti, Coche-Dury, Domaine Prieuré Roch, Antoine Jobard and Salon, as well as icons of Bordeaux such as Château Cheval Blanc or Château Lafite Rothschild. Wines that are allocated, often unobtainable. Every bottle is sourced with full traceability, stored correctly and offered only when it meets our standards.
And the experience?
Echezo is not a shop. It’s a controlled environment. A place where you can open a rare bottle without noise or spectacle. The bar exists for that, to taste, to compare, to understand.
You also work beyond the boutique?
Most of our clients never come in. We deliver directly to yachts and villas across Ibiza under strict transport conditions. We build private cellars, advise on acquisitions and verify provenance. We also curate private tastings and dinners, on board or at home, always led by a sommelier.
And the indulgence element?
Wine is complemented with a precise selection of caviar (Baeri, Oscietra, Beluga) and foie gras. Not extensive. Just exact.
What’s the philosophy behind it all?
Less noise, more substance. Echezo is about access to exceptional bottles, without ostentation, where craftsmanship, patience and conversation still matter.
