Restaurant Review : Millo

Millo 1On the north side of trendy Santa Catalina, up on Calle Caro, sits Millo; a new gastronomic delight to add to the hip downtown neighbourhood. As you enter the restaurant you’re welcomed by a modern relaxed décor with a soft and chilled out vibe. Sitting at any table you can see Chef Michel Guzman Durango creating traditional modern Columbian dishes fused with a modern take.

Millo7Michel was born in Columbia where he learned to cook from childhood with his mother, before attending cooking school in his adult years. He worked in Leo, the top restaurant in Columbia before coming to Mallorca which was largely thanks to the influence of chef Andreu Genestra, so Michel spent some time with him down in Capdepera in his restaurant before following his dream to open his own with Frenchman Loic Villepontoux. An utter foodie, Loic met Michel when they were both in France, and together they decided to launch Millo.

Millo8The menu is diverse and pretty unique; Columbian food has a huge number of influences, from Spanish and African to Indian and French, and Michel has fused all together with a Mediterranean flavour to take advantage of Mallorca’s finest fresh produce too.

millo4We pre-arranged a special tasting menu of several dishes, which we heartily recommend you wash down with some of the tremendous wines on their extensive wine list. After starting with a delicious cocktail prepared by Loic of course, from his well stocked bar.   First dish was parmesan creamed baby corn with home baked corn bread rolls. Super light and the bread was deliciously rustic. From then on the dishes became more complex in structure and flavour; fresh sargo fish with chillis and chontaduro (a pacific palm) with a delicious light cilantro cream sauce and a drizzle of sugar cane vinaigrette. millo3Then red tuna corn crisp, with okra, a caramelised sauce and just the right amount of creamed rice.   Next up was a delicate rabbit stew in a criollo sauce served with a drizzle of orange vinaigrette. The final savoury plate was my personal favourite and probably the richest flavour so make sure you have your red wine ready for this one; baby goat with an alioli of onion and beer sauce. Gorgeous. Dessert was a lovely fluffy mousse of guava with chocolate and coconut crisps. Every dish was unique; the tastes sublimely complimentary and every element incredibly well thought out. The presentation was faultless; Michel is an artist and Loic was able to talk us through each of his beautiful creations. We were not rushed through the courses, instead we were able to enjoy (and digest) each course at a civilised pace. Great service, very attentive but not intrusive at all.
